For the latest episode of our #FarmToTable series, we visited the Ortodoxo Queijo workshop, were warmly welcomed by the team and got to understand up close what makes this artisan cheese truly special.


A visit that stayed with us, and one that reinforced what we believe: knowing our suppliers better is the best way to deliver more quality and a more genuine experience to our guests and #MoinhoLovers.


From raw milk to cheese: why it matters?


It all begins with the milk. At Ortodoxo, the choice is clear: raw milk, at natural temperature, with no heat treatments that might alter its composition.


This isn't just a question of tradition, it's also one of health and flavour. Raw milk preserves enzymes, beneficial bacteria and a nutritional richness that pasteurisation tends to reduce. The result is a cheese with greater complexity of flavour, more alive, closer to what nature produced.


Artisan cheeses made from raw milk are also naturally rich in probiotics, the microorganisms that support gut health and the immune system. Unlike industrial cheeses, which often rely on preservatives and additives, artisan cheese is the result of a clean process where the ingredients speak for themselves.


The work of hands


What struck us most during the visit was the manual process. At Ortodoxo, every cheese goes through several handcrafted stages: stirring the curd, moulding, turning and washing. Each gesture repeated with care and knowledge, because it is this way, without rushing and without shortcuts, that a great cheese develops as it should.


This kind of craftsmanship demands time, dedication and a team that truly knows the product they are creating. And it shows in the final result.
